Los Javis Mezcal Espadin Joven is handcrafted and bottled in the state of Oaxaca, Mexico amount the verdant fields of Santiago Mazatlan by three generations of Javiers, led by Maestro Mezcalero Don Javier Mateo. Their process includes hand-selecting maguey/agave (Capon), which are then roasted in a conical stone oven, Tahona milled (crushed by horse drawn tahona), naturally fermented in wooden vats, then distilled in small copper pots.
