Cumberland Cask Ruby Cut is the first and only port wine finished Tennessee Whiskey to ever be produced. The whiskey has a dark amber hue and is bottled under our red label at 90 proof.
We placed our 6 year old Tennessee whiskey into 4 fresh ruby port wine barrels from California. We let it age in these barrels for a full Nashville winter to allow the whiskey to contract and squeeze all the port wine in the wood out into the whiskey. This gave the whiskey a deep amber color and some sweetness of the port. After it aged to a full maturity of 6 months, we dumped the barrels and placed the whiskey into stainless tanks to allow it to mellow.
Refilling the same 4 barrels with a new batch of 6 year old whiskey, the whiskey rested for a whole Nashville summer. The summer heat caused the whiskey to expand deep into the wood, picking up the vanilla and wood characteristics of the barrel. Once batch two reached a full maturity of 6 months, we dumped the barrels and placed the whiskey into stainless tanks to allow it to mellow.
